Buona Beef began in 1981 as a family business, when our parents opened the first restaurant in Berwyn, and we still believe the original way is the best way. We make our beef the way the earliest beef stands in Chicago did, roasting it slowly until it loses 40 to 50 percent of its original weight. The all-natural gravy comes from that roasting, which is why the beef is never pumped with water or other additives and why we add no bouillon, lard or preservatives.
